The Munoz family farm La Guamera is one of the oldest parts of the Compania Cafeteria La Meseta in Chinchina Colombia. La Meseta is one of the most respected exporting houses in Colombia, but the Munoz's real passion is their farming. On La Guamera farm, Gloria and her family are able to experiment with processing due to their well developed infrastructure. This particular lot was grown at 1500 meters above sea level, harvested at peak sugar content (19 brix count or higher), and then was sent immediately to the hot-air drying silos for experimental processing. These silos dried the coffee cherries onto the beans in a period of only 72 hours, which intensified the natural sugars and organic acids. This resulted in an intensely fruity coffee that's an excellent representation of what Chinchina Colombia can produce!
